What is tawheed, and is it enough to say that Allah is the Creator?

Tawheed is to single out Allah in what is unique to Him. Affirming that He is the Creator is tawheed of lordship, and the mushrikin of Makkah affirmed that. The tawheed that enters a person into Islam is to single Him out in worship: dua, sacrifice, fear, and hope. The names and attributes complete this: worship Allah as He named and described Himself, without likening or denying.
